100% Sauvignon Blanc from 25 acres of vineyard around the Dillons Point area of Marlborough.
Fruit was harvested during the night and very early morning at around 5ºC. The grapes were transported immediately to the winery where they were destemmed and pressed to minimise skin contact. The racked juice was inoculated with yeast and fermented at 12ºC for 3 weeks. The wine was racked, stabilised, filtered and bottled without fining.
Great concentration, with a classic spectrum of flavour. This single vineyard wine has layers of passionfruit, red currant and capsicum. A textural wine with mouth-watering minerality and herbal notes.
