100% Pinot Noir from 23 year old vines grown in the Barton Vineyard on Huangarua Road, located in the Martinborough winegrowing region.
Fruit was open topped fermented using indigenous yeasts in traditional wooden cuvees, hand plunged every 12 hours, with a total vat time of 24 days. After pressing it was matured in 30% new French oak barriques for 18 months. Bottled using a minimum of egg white to protect flavours and aid brightness; and without filtering, promoting soft mouthfeel and texture.
A Pinot Noir with a unique site-derived complexity, combined with black cherry and plum fruit flavours. Will continue to develop for up to 10 years and is always a wonderful counterpart to food, particularly game.
