100% Chardonnay from individual barrel selections of two dry farmed northern Hawkes Bay vineyards in Bay View.
Individual parcels were hand harvested and whole cluster pressed. Only low juice yields were taken. The unsettled juice was run off to barrel for fermentation with indigenous yeasts. Some barrels were allowed to undergo malolactic fermentation to naturally soften the acidity. The finished wine was left on lees till bottling with occasional lees stirring. The final blend was a barrel selection of 70% from the Howard Vineyard and 30% Esk Valley home block.
Elegant, complex and creamy textured, displaying vineyard-derived complexity and flavours of peach, grapefruit and cashew. Naturally made with a 'hands off' approach, it is both food friendly and age worthy and vividly exhibits the complexity of Bay View Chardonnay. Further interest is added with subtle oak and lees developing complexity from barrel ageing.
