100% Merlot harvested from Saint Clair’s naturally low cropping Rapaura Road vineyard in Marlborough.
De-stemmed fruit was 5-day cold soaked. Specially selected yeast was added and the fermenting wine hand plunged and pumped over. Once primary fermentation was completed it was kept in contact with skins and tasted daily until balanced. Pressed off its skins, left to settle, then racked to 55% new American oak where it underwent malolactic fermentation. Aged on light lees before blending, egg-white fining and bottling.
Rich concentrated aromas of wild blackberries, Black Doris plums and dark chocolate with hints of old leather and aromatic cigar smoke. The palate displays ripe, luscious blackberry and dark chocolate, combined with the round silky mid-palate structure, perfectly balanced acidity and a long spicy, smoky finish.
