100% Pinot Gris sourced from outstanding vineyards on New Zealand's East Coast.
Fruit was picked cool and pressed quickly to ensure no colour or bitterness was extracted from the thick skins. Juice was settled briefly prior to fermentation and each parcel was fermented with a different yeast, some to enhance aromatic character and others to provide texture and interest. After a short maturation period the parcels were blended.
Ripe apple and fuller figured pear saunter into view with lovely spice and vanilla trailing behind. They chatter in gentle, sweet tones, occasionally cutting the air with their fresh, crisp laughter!
