100% Chardonnay sourced from the very best vineyard blocks, located on free draining gravel soils in the Hawkes Bay.
After gentle pressing the juice was settled briefly before being run to tight grained French oak barrels. Most of the barrels were allowed to ferment with wild yeasts that came in from the vineyard. The balance was inoculated with selected yeast strains. After malolactic fermentation in spring, the young wine stayed in contact with its yeast lees for 10 months before being blended and prepared for bottling.
A very lean and pure expression of Hawkes Bay Chardonnay. The elegant but aromatic nose is reminiscent of citrus fruits and is supported by layers of bran and vanilla character from the oak barrels. The palate is concentrated and complex. The citrus like fruit notes are balanced by richness derived from ageing on the yeast lees.
