100% Chardonnay from the Keltern Vineyard located east of the Maraekakaho region in Hawkes Bay.
Fruit was whole bunch pressed and 100% barrique fermented using wild and inoculated yeasts. The barriques were 50% new with the balance 1 and 2 year old. Matured for 10 months in barrique. Battonage occurred once weekly during malolactic fermentation and 58% for full term. Filtered using sterile bell house filtration, one pass only.
