100% Sauvignon Blanc grown in vineyards located throughout the Hawkes Bay area, from the sub-regions of Raukawa, Porangahau and Mangatahi.
Fruit was gently pressed at the winery to produce an elegant, fruit-driven wine with low phenolics. It was fermented at cool temperatures in stainless steel tanks to retain fresh fruit characters. A 15% component was fermented in small barriques to promote complexity, with the majority aged 8 months on lees.
Gentle flavours and aromas of lime, citrus and lemongrass compliment the distinct aroma of stone-fruit. A mineral element gives presence to a Sancerre-like textural character. The fresh acidity is balanced by a tiny amount of retained sweetness.
