100% Pinot Noir from Two Paddock's vineyards situated in the Gibbston, Alexandra and Bannockburn sub-regions of Central Otago.
Fruit was hand-harvested, 95% destemmed and given 5-7 days pre-fermentation cold maceration. After an indigenous ferment the wine is given another 5 to 7 days post ferment time on skins, then transferred to old French medium-toast barriques for a 10 month maturation in predominantly older oak, before racking and bottling.
A characteristically Central Otago bouquet, displaying blackcurrant, mocha, char, spice and wild herb aromatics. This leads the palate onto an elegant, textural wine with great poise, tension and drive.
